Restaurants Adapting to Covid-19 / Food Truck Edition

‘Remember the appearance of the food truck revolution a few years back? Restaurants were rightfully defending their market share from the new kids on the block. Eventually it all got sorted out with even a few restaurants operating their own food trucks (PT’s comes to mind).

Then came 2020. Lawdy!

Suddenly even the national chains are shuttering here (On the Border, Ruby Tuesday’s), but local restaurants are hanging in there by adapting to the times.

According to WRAL, more restaurants are turning to the food truck model to stay alive. ‘Makes sense when your dining rooms are now considered risky and not everyone has room for outdoor seating.
